Native Spanish speakers, do you get offended when someone assumes you speak Spanish and tries to speak it?
I'm a cashier at a store where a large majority of Spanish speaking individuals shop. I have this huge urge to say certain things in Spanish such as, "Gracias", "Lo Siento", "Hola" but it may come off as ignorance or arrogance. ESPECIALLY, if I just judge that person by their physical characteristics and accent without actually HEARING them speak Spanish.

No, I don´t get offended at all if that person speaks spanish (and I mean speak, not try to speak) but If the person doens´t it´s OK too.
Course not we arent like that. French are though.

I agree with the first answer. Usually Spanish speaking community do not get offended by saying Spanish words or phrases but French people are very arrogant and extremely proud of their culture and language that if you speak French with a bad accept or pronounce a word not as it is supposed to be pronounced then they would get upset and might even warn you!

I know you may be eager to speak Spanish, but it is wise to wait and hear them speak.
I don’t know if your native tongue is Spanish, or if you are just eager to practice what you have learned so far.
It always brings a smile to my soul when someone wants to learn my language because they want to, not because they have to.
Keep up the good work, and do not miss the opportunity to say "grácias, lo siento, hóla", someone will smile and say "hóla" in return.
